Looking for recipes...


I'm not sure if i put this in the right spot, but does anyone have any good casserole recipes? You know, like the food that's all in one baking dish. My mother-in-law to be made a crazy good taco casserole, and I only know how to make perogie casserole and Chinese Hamburger Casserole. Any other really good ones you guys have?

I just find casseroles so easy and less dishes and great comfort food.

This is really a breakfast casserole (though I've had it for dinner too). It's very easy though, like a quiche, and great for brunches. You can make substitutions, like using smoked salmon instead of sausage, and using gluten-free bread.

1 LB. bulk sausage (or smoked salmon. Or no meat at all, just a bit of sage or dill)
4 slices of bread, cut into 1/2" cubes
6 to 8 eggs
2 cups milk
1 cup of shredded cheddar cheese
1/2 tsp. salt
1/2 tsp. dry mustard
Crumble sausage in a medium skillet, cook over medium heat until brown, stirring occasionally. Drain well. Spread bread cubes in a buttered 12 X 8 X 2" baking dish top with sausage and cheese. Combine eggs, milk, seasonings, beat well and pour over cheese, cover and refrigerate overnight. Bake at 350 degrees for 30-40 minutes or until set. Yield: 6-8 servings

I have plenty of recipes...just let me dig them out. My family is not huge on casseroles, but I grew upwith them in Nebraska.

Hey Skilly................. I grew up in Nebraska too AND I also have some casseroles I'll try to post. Where are you from in Nebraska?

I'm from Grand Island.

And I grew up on casseroles because when I was growing up, my family attended a Baptist church. And, hate to say this, but Baptists do have a reputation for enjoying lots of pot lucks.

As for the recipes...still trying to find my cookbooks and recipe box. They're still in the boxes from moving...

Well I grew up in O'Neill -- not so far from Grand Island. Go through it everytime we go back and visits our parents.
Yes I know all about Baptists and casseroles. The two go hand in hand. Have a great day.

The breakfast casserole by Nakamova sounds delicious.

My Mom makes a ham and cheese bake which is gorgeous. First she boils some broccoli and cauliflower and either makes a cheese sauce from scratch or uses a packet one. Then she just layers packet ham, broccoli, cauliflower and cheese sauce in a casserole dish, finished with a sprinkling of cheese. She then bakes it in the oven for 15mins on 190°c. It is lovely.

This one probably isn't friendly to the folks here on the special diets, but its a favorite with my family.

Enchilada Casserole

1 lb browned hamburger meat
1 package of corn tortillas (you'll have lots left )
1 can red enchilada sauce
1 can corn, drained.
1 can refried beans
1 can tomato soup
1 can black beans, drained
1 1/2 cups cheddar cheese

Mix the meat, 3/4 can enchilada sauce, corn, beans and soup in a mixing bowl. Then in the casserole dish, layer mixture, tortillas, then cheese (saving some for later) and keep going til you run out of the mix. Then top with tortillas and pour the remaining enchilada sauce on top and bake at 350 for about 30 mins. Then top with remaining cheese and bake an additional 5 or until cheese melts.

You can improvise and use more meat, or more cheese if you like.

Frito Pie

1 med size can of chili
a med size Fritos corn chips (I use the generic brand, lol)
a cup of cheese or more if you like.

Layer chips, chili, cheese til you run out, saving some cheese to top it like the other recipe. Bake the same way.

Can you tell I am all about easy? And I come from Texas, so the spicier the better.

3 Casserole Recipes


Veggie Chili

Ingredients:

4 tablespoons olive oil
1 1/2 cups chopped onion
2 tablespoons minced garlic
2 bags frozen Bird's Eye Stir Fry Peppers
4 diced jalapeno peppers -- without seeds
2 1/2 teaspoons chili powder
1 teaspoon ground cumin
2 cans (28 oz.) whole, peeled tomatoes with liquid
I can fat-free chicken broth
2 cups salsa
1 can black beans, drained
1 can red kidney beans, drained
1 can cannelli beans, drained
1 small can of corn

Directions:

Heat oil in stock pot over medium heat. Add onions and garlic. Saute 3-4 minutes until softened.

Stir in frozen stir fry peppers and jalapenos. Saute 3-4 minutes until softened.

Stir in chili powder and cumin.

Cut or tear apart canned peeled tomatoes and add to pot with juice, stirring.

Add chicken stock and salsa. Stir and bring everything to a boil.

Reduce heat to medium and simmer for 10 minutes, stirring occasionally until mixture has thickened slightly.

Drain beans and add, stirring. Drain corn and add, stirring.

Heat through and check seasoning. Add more jalapenos, chili powder or cumin if too tame.


Spinach and Orzo Pie

Ingredients:

1 1/2 cup Orzo (rosemarina)
2 beaten eggs
1 15 1/2 ounce jar chunky pasta sauce
1 cup grated Parmesan cheese
Nonstick cooking spray coating
1 10 ounce package frozen, chopped spinach
1/2 cup low-fat Ricotta cheese
1/2 cup shredded part-skim Mozzarella cheese (or any mixture of "Italian cheeses")
3-5 twists of ground black pepper

Directions:

Cook orzo according to package directions; drain.

Combine eggs, orzo, 1/2 cup of spaghetti sauce, and Parmesan cheese.

Spray a deep 9" pie plate with nonstick coating.

Spread orzo mixture over bottom and up sides of pie plate to form a shell.

Cook spinach according to package directions; drain well.

In another bowl stir together spinach, ricotta cheese, and pepper.

Spoon into bottom of pasta-lined plate.

Spread remaining spaghetti sauce over spinach-ricotta layer.

Cover edge of pie with foil. Bake in a 350F oven for 30 minutes.

Sprinkle with shredded mozzarella or Italian cheeses.

Bake for 3-5 minutes more or till cheese melts.

Let stand for 5 minutes before serving.

Yield: 6 servings
Per serving: 342 calories, 10g fat, 52mg cholesterol


Chicken-and-Mushroom Florentine Recipe - Cooking Light

Ingredients:

1 (16-ounce) can fat-free, less-sodium chicken broth, divided
4 cups sliced mushrooms
1/3 cup chopped onion
1 (10-ounce) package fresh spinach
1 (12-ounce) can evaporated fat-free milk, divided
1 teaspoon garlic powder
1/2 teaspoon seasoned salt
1 tablespoon cornstarch
1 cup (4 ounces) shredded part-skim mozzarella cheese
4 cups hot cooked ziti (about 3 cups uncooked short tube-shaped pasta)
Cooking spray
2 cups shredded cooked chicken breast (about 3/4 pound)
1 cup (4 ounces) shredded marbled cheddar and Monterey Jack cheese

Directions:

Preheat oven to 350°.

Bring 1 cup broth to a boil in a large nonstick skillet.

Add mushrooms, onion, and spinach; reduce heat, and simmer for 10 minutes.

Combine the remaining broth, 1 cup milk, garlic powder, and salt in a medium saucepan; bring to a simmer.

Combine remaining milk and cornstarch in a small bowl. Add cornstarch mixture and mozzarella to broth mixture; cook 2 minutes or until thick.

Arrange pasta in bottom of a 3-quart casserole coated with cooking spray; top with spinach mixture and chicken. Spoon broth mixture over chicken, and sprinkle with cheddar.

Bake at 350° for 30 minutes or until cheese melts and begins to brown.

Yield:
6 servings (serving size: 1 1/2 cups)

Okay here is my Chinese hamburger recipe. I figured you guys are all helping me out that I will post one of m favourites.

You will need:

1 large package of your favourite ground meat *grandpa uses extra lean beef, I like lean pork*
1 bag of bean sprouts. *about 1/2 a pound i use*
2 cans mushroom soup mix.
6 tbsp soy sauce
4 tbsp brown sugar
1/4 cup water
1 onion
4-6 celery stalks *I prefer to use bok Choy*
2-3 cups raw minute rice

Mix the soup, water, soy sauce and the brown sugar in a small bowl and set aside

Fry up the hamburger in a pan then drain off the excess fat.
next fry up the onion and celery *you can season it with pepper if you want, but you dont need salt as there is plenty in the soy sauce*

in a casserole dish layer the meat in the bottom. next add the veggies * not the bean sprouts* and then the raw rice and then the sauce and then the bean sprouts.

bake in the oven at 350 for about 20 mins to 30 mins checking to see if the rice is cooked at 20 mins

makes tonnes and tonnes.Great for a pot luck

you can play with the ingrediants too. I made this with turkey and cream of broccoli soup and it was awesome. Just replaced the bean sprouts with broccoli florets and added croutons mixed into the meat. *used celery not bok choy*
