Creamy Curry Sauce


This is a tasty, creamy and rich sauce that is delicious poured over steamed vegetables, chicken or fish. It compliments anything that needs some added flavor. Play with the amount of curry seasoning to suit your own taste

Serves 6

1 TBL olive oil or coconut oil or ghee
1 tsp curry seasoning
1 tsp sea salt
1 can coconut milk
1/4 cup lime juice

Heat the oil in a frying pan
Sprinkle in the curry seasoning and the sea salt
Cook over medium heat, stirring continuously for about 1 minute
Pour in the coconut milk and stir thoroughly
Remove from the heat and add the lime juice
This sauce can be served hot or cold

Variations:
~Add 1 TBL of ginger juice with the lime
~Mince and saute some garlic before adding the curry seasoning

another thing you can add, you can get it at all asian grocers
people are scared of it but it really does make a curry delicious /authentic...
just trust me on this!

1 tablespoon fish sauce +
1-2 teaspoons sugar

I use fish sauce in my stir fry cooking. It adds a nice flavor.
