So I am in charge of making perogies this year for Christmas dinner, and since I decided to try and go gluten free this weekend I will be going gluten free as much as possible this Christmas (I havent given my family enough notice to adapt everything just for me) So I found this dough receioe
2 1/4 cups glutinous rice flour
1/4 cup potato flour
3/4 teaspoon salt
1/2 teaspoon sugar
1 1/2 cup boiling water
To make wrapper: Bring pot of water to a rolling boil for several minutes.
Meanwhile, combine the first 4 ingredients. Now, measure the amount of water needed and return that to a boil and immediately pour the boiling water over the dry ingredients. Mix well, cover for about 5 mintues. Afterwards, knead 3 or 4 minutes. Oil your hands and surfaces if the dough starts sticking.
