Jemma, welcome! This sounds like you may be experiencing some plasticity. They are finding out that some people with brain injuries are able to develop new neurons that help create new connections in brain tissue.

This may be happening to you. There are several books out there that discuss this and they have evidence to prove it. Normal people never use their entire brain, so any undamaged tissue may be re-learning and helping your recovery.
 
Eliminating aspartame from your diet (found in a lot of 'diet' foods) can also have a masiive effect by dramatically reducing the amount of seizures you have. Cutting out aspartame has halved the amount of seizures my daughter and I have.

I would personally also be very careful of products with any MSG. It is a neurotoxin.
It doesn't always say monosodium glutamate. It will be Citric Acid, Maltodextrin, Soy Protein, Caramel Flavoring, Broth, ... 40 names they allow to confuse us.
