Many folks seem to have the same problem you're having -- they get all hooked up and then their brain refuses to misbehave! I don't know what it is about the hospital setting...
The half-life of those meds depends a bit on the dosages, but I found it took about two weeks for me to have a seizure after going off Dilantin. That was after a slow taper rather than an abrupt stoppage, so you may get seizure activity sooner than I did.
Best way to bring on a seizure is sleep deprivation and anything else you suspect is a trigger for you -- low blood sugar, stress, jumping up and down with your hands over your head, stretching and yawning, hyperventilating -- whatever it takes. Good luck!
