This one probably isn't friendly to the folks here on the special diets, but its a favorite with my family.
Enchilada Casserole
1 lb browned hamburger meat
1 package of corn tortillas (you'll have lots left

)
1 can red enchilada sauce
1 can corn, drained.
1 can refried beans
1 can tomato soup
1 can black beans, drained
1 1/2 cups cheddar cheese
Mix the meat, 3/4 can enchilada sauce, corn, beans and soup in a mixing bowl. Then in the casserole dish, layer mixture, tortillas, then cheese (saving some for later) and keep going til you run out of the mix. Then top with tortillas and pour the remaining enchilada sauce on top and bake at 350 for about 30 mins. Then top with remaining cheese and bake an additional 5 or until cheese melts.
You can improvise and use more meat, or more cheese if you like.

Frito Pie
1 med size can of chili
a med size Fritos corn chips (I use the generic brand, lol)
a cup of cheese or more if you like.
Layer chips, chili, cheese til you run out, saving some cheese to top it like the other recipe. Bake the same way.
Can you tell I am all about easy?
And I come from Texas, so the spicier the better.
