Nice find Zoe. It's good to be aware of these issues - especially if the AEDs are providing good seizure control and you are likely to be taking them for a long time.
 
Some specialists and researchers have been urging for several years that folks taking AEDs start taking some of the nutrients depleted by the drugs as soon as they start using the AED in hopes of preventing some of thelong ter side effects. I don't have those handy, but it is worth looking up again.

I will attempt to research those articles too.

It's a question of balance. Do a google on "zinc" "seizures" but also on "copper deficiency" "seizures". Always check on safe upper limits, as too much of a good thing can harm. I've found a lot of pharmacies now carry information on herbs and supplements as well, a great resouce.
