Can you peel yams/sweet potatos the day before and soak them in water over night to cook them the next day? I'm making candied yams for Thanksgiving and I don't really want to have to get up at the crack of dawn to start making them. I know you can do this with potatos.
 
Yes, you can do that. You might want to add either a little salt to the cold water, or a little lemon juice, just to keep them from turning brown.

I don't know anything about cooking, I can't boil water :P I just wanted to say that being able to ask such a question and get helpful answers is one of the reasons I love this site. People here are awesome!
 
I don't peel the sweet potatoes (yams) before I cook them. I cook them whole and then peel them when they are soft.
 
I peeled them the night before and they sat in the fridge in water over night and the dish turned out just fine the next day, every one loved it. I made sweet potato cassorole and I had to peel the yams first because they were going to bake in the oven.
 
Yes mine bake in the oven too, but I boil them to soften them up. I then let them cool (if I am not in a rush), then I peel them, slice them, or puree them, and put them in a dish for the oven. They are so easy to peel after being boiled. The skin just peels away from the flesh.

I am glad that your "experiment" worked out, and was a success. I love sweet potatoes / yams.
