I just received my MRI images back today. This sounds silly, but I had the idea for me and my brother to use one of the images (obviously blacking out all of the medical information) of my brain as the cover for the album we're currently writing.

Would there be legal issues with this?

IMHO, since it's a picture of your own brain, I don't see why you wouldn't be able to use it if you plan on blacking out all the medical jargon. Call your neuro and ask. Sounds like a great idea to me. ;)
